In winter it would freeze over and if needed you could boil then drink the water but until you boil it it is pool water and just for the sake of convenience i would say that its a salt water pool so if you do drink it then you fill your thirst for a few hours but then it comes back faster. But on the note of 'slowly going dry over time' because of the design of the pool as a water-trapping structure, I don't think that would happen. But remember with weathering and eroding coming to the game, Cracks would appear and it would eventually dry up if not rained on once a week. It could drain into the cracks.
