Never done it, but you can apparently attract animals with food, no idea if that helps to calm them down. This info from the game files might help.

I read somewhere that you can manually feed certain items of food to animals, like fruit and veg, in order to gain their trust (I'm particularly interested in cows as I have an "Agitated" bull that doesn't seem to want to calm down). I'm a few months into my save, in the middle of winter, so I can't find or forage fresh fruit and veg. Are there any other foods that might work? Is there a way of finding a definitive list?
