to get grass you need to right click on the ground where you see grass growing. then you should see remove grass. doing this will give you grass. as for the poop. you need to find the Mammal Fieldguide. this will teach you the Gather Dung crafting thing. keep the book as it is needed to search for dung. hope this helps.
